And, how will I know if they are expired and need to change them?

Good Morning Elizabeth, yes it is safe to put in your pantry and fridge, when you notice odour coming back is when you know bags need replacing or recharging. To recharge put out in sunlight for a few hours. Usually they last around 12 months.
